- Heat oil in a large skillet over medium heat. Add ham and onion. Saute until ham is browned and onion is softened, about 5 minutes. Add beans, cilantro, sofrito, and vinegar. Cook 5 minutes.
- Stir in rice and water. Bring to a boil, reduce heat, and simmer, covered, until rice is tender, about 15 minutes. Garnish with additional cilantro if desired.
Notes :
- If you are unable to find the sofrito or want a fresher version, you can easily make your own. In a food processor combine 4 cloves chopped garlic, 4 cilantro sprigs, 1/2 cup chopped onion, 1/2 cup chopped green bell pepper, and 2 tablespoons of tomato paste. Pulse until it forms a thick paste.
